    Ida's Peach Preserves

    (Use a stainless steel or enamel pan only).

    4 cups peaches, don't peel after cutting up; mash to make juice. Save peach pits. Add 1 tablespoon lemon juice and 2 teaspoon epsom salt while mashing. (I'm not sure if I'd add the epsom salts, but Ida swears by it.)

    Put the peach pulp mixture in a pan and bring to a boil; stir and add 4 cups sugar. Cook and stir while cooking 12 to 15 minutes more. With pits and all ~ pour jam in hot jelly jars, putting 1 pit in each, using a spoon. Seal and wipe off seal. After 24 hours, remove rings.
