Perfect Roast Beef
Use a heavy pan.
For a 3-4 lb. roast - 500° for 1/2 hour
For a 6-8 lb. roast - 500° for 1 hour
Baste all over with oil. Cook the roast in a 500° oven for 1 hour, uncovered. Do Not Open Oven Door; turn oven off, and let finish cooking for 2 hours.
