Salisbury Steaks
2 tablespoons butter or margarine
4 medium onions, sliced
2 medium green bell peppers, cut in 2-inch strips
1 pound ground beef
1 cup soft bread crumbs (2 slices white bread)
1 egg
Salt and pepper to taste
1 tablespoon flour
1 cup water
2 tablespoons ketchup
1/2 teaspoon soy sauce
In a skillet over medium heat, melt butter and oleo. Cook onion and green peppers until tender, stirring frequently. Remove onion mixture to warm platter and keep warm.
In medium bowl, mix ground beef, bread crumbs, egg, salt and pepper to taste. Shape into four oval patties, 1/2-inch thick. In same skillet, cook patties 5 minutes until done, turning once. Arrange patties on platter with peppers and onions. Keep warm.
Add last 4 ingredients to drippings; stir constantly until mixture is slightly thickened. Pour over patties.
