Berks County Potato Dumplings
6 raw potatoes
10 slices white bread
1 onion, grated
2 eggs, well beaten
1 teaspoon minced parsley
Salt and pepper to taste
Grate the potatoes. Soak bread in cold water, squeeze out as much water as possible. Mix the bread, salt and pepper, grated onion and parsley. Add grated potatoes and eggs. Mix well.
Form into golf ball size; roll into flour gently. Drop into boiling salted water. Cook in covered pan 15 minutes over medium heat. Using slotted spoon, remove from water gently and serve with sauerkraut or chicken, etc.
