Hungarian Pastry Squares
1 stick oleo, softened
1/2 cup sugar
2 egg yolks, separated (save whites)
1 teaspoon vanilla
1-1/2 cups flour
1/2 teaspoon baking powder
Pinch of baking soda
Pinch of salt
1 carton Apricot butter or/2 cans (12-oz. each) Solo brand apricot butter or filling
Chopped nuts
Preheat oven to 350° F.
Cream sugar and oleo; add egg yolks; beat until light and fluffy. Add vanilla and dry ingredients; mix well. Pat into greased 9x13-inch baking pan. Spread the apricot filling over the dough. Sprinkle with nuts.
Beat egg whites, stiff but not dry. Spread over apricot-nut layer. Sprinkle with more chopped nuts. Bake at 350° F. for 25 to 30 minutes. After its cooled, cut into squares.
