    Italian Potato Mold

    3 tablespoons fine dry bread crumbs
    3 cups mashed potatoes, prepared with butter and seasonings (omit milk)
    2 eggs
    1/4 cup grated Romano cheese
    2 tablespoons snipped parsley
    1/8 teaspoon pepper
    4 slices Provolone cheese

    Butter a 6 cup oven-proof bowl or casserole. Sprinkle with the bread crumbs. Prepare mashed potatoes with butter and seasonings, but no milk.
    Beat in the eggs, one at a time; stir in Romano cheese, parsley and pepper; spoon 1/3 of mixture into bowl/dish and top with 2 slices Provolone cheese.

    Repeat layer and finish up with potatoes. Bake at 350° for 45 minutes to 1 hour or until golden brown and mold pulls away from sides of bowl. Cool on a wire rack 10 minutes; then take a sharp knife and loosen around edges.
    Invert onto a serving plate.

    Serves 4-6
