Spaghetti Squash Bake
Cut 1 spaghetti squash in half lengthwise, remove seeds and place cut side down in a large pot, with at least 2-inches of water. Cover with a lid; boil 20 minutes. Remove from pan; draining well. Scoop out spaghetti squash; add:
1 cup grated Cheddar cheese
1 cup grated zucchini
1 cup tomato sauce
1/4 teaspoon salt and pepper
1/8 teaspoon crumbled basil
Dash of garlic powder
Mix well; spoon into a greased casserole or can put back in squash shells. Sprinkle with 2 tablespoons grated Parmesan cheese. Bake at 350° F. for about 20 minutes.
Serves 2-4,depending on size of squash
