No-Meat Meatballs
1 cup cottage cheese
4 eggs, well beaten
1 cup shredded sharp cheese
2 cups herb-seasoned stuffing mix
1-1/2 cups coarsely chopped nuts
1/2 cup chopped onion
1 teaspoon crumbled basil leaves
1/2 teaspoon seasoned salt
1/2 teaspoon ground sage
1 (15-ounce) jar marinara sauce
Preheat oven to 350° F. In a large bowl, combine all ingredients except sauce. Mix well. Using 1/3 cup of mixture for each meatball....shape into balls and arrange in a lightly greased 8-inch square baking dish.
Spoon marinara sauce even;y over the top. Bake, uncovered, 30-35 minutes or until bubbly. Serve hot, and refrigerate any leftovers.
