    GOLABKI OR CABBAGE ROLLS

    Source of Recipe

    Mom

    List of Ingredients

    2 heads of green cabbage
2 cups of rice or how much you like
    1 large onion, chopped fine
4 lbs. lean ground pork, lean ground veal, lean ground turkey or lean ground beef
Salt and pepper and garlic, to taste
    2 eggs
    2 cups water
3 or 4 jars of your favorite spaghetti sauce

    Recipe

Cut the core out of the cabbage completely. Place cabbage in boiling salted water and cook removing leaves as they get tender. Drain in a colander or on paper towels and leave to cool.

Mix meat with rice, onion, salt, pepper, garlic, eggs and water. You can add a cup of spaghetti sauce to the mixture also.

Separate the cabbage leaves and trim down the spines with a small, sharp knife. Place all the leaves out on a clean work surface and divide the filling evenly among all the leaves.

To roll up, fold in the sides around the filling and roll up from the thick end to the thin end. Place all the cabbage rolls tightly into the casserole dish. It may be necessary to have two layers of rolls and possibly three. Pour 3 or 4 jars of your favorite spaghetti sauce and 1 spaghetti sauce jar of water over the rolls. Cover the casserole tightly and cook in a preheated 375 degree oven for 1 hour. Depending on the size and amount of the rolls, you might need to cook it a little longer. Take one out and see if it's done.
