    Recipe Introduction

    This is my favorite recipe for Carrot Cake. It's a moist cake. I hate it when I get a dry Carrot Cake or one that is overly spiced. This one is just right!

    List of Ingredients

    2 cups flour
    2 tsps. baking soda
    2 tsps. cinnamon
    ½ tsp ginger
    ½ tsp. salt
    3 eggs
    1 ½ cups sugar
    1 small can crushed pineapples in juice
    ¾ cup chopped walnuts
    2 cups shredded carrots
    ¾ cup mayonnaise

    Recipe

    Grease and flour 2 (9 inch) round baking pans. Stir first 5 ingredients. Set aside. Beat eggs, sugar, mayo and pineapples. Gradually beat in flour mixture. Stir in by spoon the carrots and walnuts.

    Bake in a 350 oven for 30 – 35 minutes. Frost with cream cheese frosting.

    I leave out the ginger. I don’t like the taste of it in a cake and I put in extra cinnamon. Also, I use chopped pecans instead of chopped walnuts. I just like it better. And I bake this cake in a bunt pan.
