    RED VELVET CAKE

    List of Ingredients

    1 1/2 cups sugar
    1/2 cup shortening
    2 cups sifted flour
    3 tbsps. cocoa
    1 tsp. salt
    1 (1 oz.) bottle red food coloring
    1 cup buttermilk
    2 eggs
    1 tsp. vanilla
    1 tbsp. vinegar
    1 tsp. baking soda

    FROSTING:
    3 tbsps. flour
    1 cup milk
    1 cup margarine
    1 cup sugar
    1 tsp. vanilla





    Recipe

    Combine sugar and shortening, then add flour, cocoa, salt, food coloring and 3/4 c. buttermilk. Beat. Add eggs, 1/4 c. buttermilk and vanilla; beat 1 minute. Mix together vinegar and baking soda. Stir into batter by hand. Pour into 2 - 9" greased and floured cake pans.

    Bake in a 350 degree oven for 30 minutes.


    FROSTING: Cook flour and milk until thick, let cool. Cream together margarine and sugar. Add vanilla. Beat the two mixtures together until the consistency is that of whipped cream. Spread on cooled cake.
