    CHICKEN MINI EMPANADAS

    1 pkg. pie dough mix
    Chicken, cooked and cut up
    1 cup salsa
    1 cup shredded Mexican Cheese

    Recipe



    Prepare pie dough and wrap in plastic wrap and refrigerate.

    Combine chicken and salsa in a pan over medium heat and bring to a boil. Simmer 5 minutes. Remove from heat and add cheese.

    Roll out pie dough and cut out 18 - 3 inch circles. Place 1 tbsp. chicken filling in the center of each circle. Moisten edges with water. Fold over and pinch to seal.

    Bake 15 minutes or until golden brown in a 400 degree oven.
