COTTAGE CHEESE KOLACKY

Recipe from newspaper by Josephine Dvorak, born in Moravia 1901. She has been making the pastry almost as long, a craft she learned from her mother.
List of Ingredients
1/2 lb. butter, room temp.
2 tbsps. powdered sugar
1 (8 oz.) pkg. cream cheese, room temp
1 egg yolk
2 cups flour
1/2 tsp. baking powder
Recipe
Cream butter with 2 tbsps. powdered sugar, egg yolk and cream cheese. Combine flour and baking powder, combine with butter mixture until smooth. Chill dough for about 30 minutes.
Divide dough in half. Roll on a lightly floured surface to a thickness of 1/4 inch. Cut into 2 inch circles with a floured cookie cutter or glass. Place on an ungreased baking sheet. With fingertips, make a depression in center of each circle. Place 1/2 to 1 tbsp. filling in center of each kolacky.
Bake in a pre-heated 350 degree oven for 15 to 20 minutes until kolacky are set but not colored. Remove from oven to cool on wire rack. Dust with powdered sugar. Makes about 3 dozen kolacky.
Filling:
1/2 lb. dry curd cottage cheese
2 tbsps. sugar
1 tsp. vanilla
1 egg yolk
2 tbsps. melted butter
With a fork mix cottage cheese with sugar, vanilla, egg yolk and melted butter. Or use Bohemian Kitchen brand fillings such as apricot, pineapple, raspberry, blueberry.
