2 1/2 cups flour
1 1/2 cups confectioners sugar
1/2 tsp. salt
1 cup butter or margarine
1 egg, beaten
2 tbsps. milk
2 tsps. vanilla
Recipe
Combine flour, confectioner's sugar and salt and sift into bowl. Cut in butter or margarine until mixture resembles fine crumbs. Add egg, milk and vanilla; mix until dough holds together. Press into ball. Wrap and chill well. Roll 1/2 of the dough at a time on a lightly floured board and proceed as suggested below.
Fancy Cookies for Christmas Cookie Trays
Roll dough to 1/8" or more thickness. Cut into favorite fancy shapes with floured cookie cutters. Arrange 1 inch apart on ungreased cookie sheets. Bake in a 350 oven until done, about 8 minutes. Transfer cookies to wire racks and cool. Frost as desired with butter cream icing using writing or other tip of cake decorating set. Makes about 4 1/2 dozen cookies.
BUTTER CREAM ICING
1/2 cup butter or margarine
1/2 cup solid shortening
1/4 tsp. salt
1 1/2 tsp. vanilla
5 1/2 cups confectioners sugar
(there are 4 cups to a lb.)
1/4 cup and 1 tbsp milk
Cream butter and shortening. Add vanilla and salt. Gradually add sugar one cup at a time, beating well after each addition. When all sugar has been added, icing will appear dry. Add milk and beat at high speed until light and fluffy. Keep icing covered with a damp cloth until you're ready to decorate. For best decorating results keep icing bowl in refrigerator when not in use.
