MRS. FIELDS BUTTER TOFFEE COOKIES

1 cup unsalted butter at room temperature
1/2 cup granulated sugar
1 cup dark brown sugar
2 eggs
1 tbsp. vanilla extract
2 2/3 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 - 10 oz. pkg. Hershey's Skor bits
Recipe
Preheat oven to 325 degrees. Line your cookie sheets with parchment paper if possible. In a large mixing bowl cream together the butter, sugar and brown sugar. Add the eggs one at a time and then the vanilla. Continue mixing at medium speed until the mixture lightens in color and is somewhat fluffy. With your mixer on low, gradually blend in the flour, soda and salt. Stir in the toffee bits until well distributed being careful not to over mix the dough.
Form 1 1/4 inch dough balls and place 2 inches apart on cookie sheets. Flatten dough balls SLIGHTLY. Bake for 12 to 14 minutes rotating the cookie sheets in your oven midway during the baking time. DO NOT OVER-BAKE! Cookies will be soft in the center but will continue to set after they are removed from the oven. Allow to cool completely before storing in an airtight container.
If you feel you have over-baked the cookies, slide the parchment and cookies off of the cookie sheets immediately. This will eliminate any additional heat from the cookie sheets "baking" the cookies any longer after removal from your oven.
