    Light, flakey Mexican pastry

    List of Ingredients




    1/4 tsp. salt
    1/4 cup butter
    1/4 cup sugar
    1 egg, beaten
    1 1/2 cups flour
    1/4 cup warm water
    oil for frying
    1/4 cup cinnamon-sugar

    Recipe



    Beat salt, butter, sugar and egg in a large bowl, add flour and warm water and mix. Knead on floured surface until dough is smooth; return to bowl and cover with dry towel. Let rest 15 minutes. Divide dough into 20 balls, coat with flour and press into flat 3 inch circles stack between wax paper until ready to fry.

    Heat oil to 400 degrees in skillet and fry one bunuelo at a time 30 seconds on each side until golden and crispy. Remove and drain on paper towels. While still hot, sprinkle with cinnamon-sugar.

    Best eaten warm. Can be stored in an airtight container and reheated in oven at 350 degrees for 8 minutes until crisp.
