    POTATO SALAD

    Recipe Introduction

    I don't like crunching on raw vegetables so I put the vegetables in a blender and make them very fine. This way I get the flavor of the vegetables without crunching on them.

    List of Ingredients

    1 – 5lb bag of red potatoes
    2 – 3 ribs celery
    ½ green pepper
    ½ of a small onion
    1 jar Miracle Whip
    1 dozen eggs
    salt & pepper to taste

    * sour cream

    Recipe

    Boil potatoes until knife inserted goes through smoothly. Cool potatoes and peel. Boil eggs; cool and peel.

    Cut up celery, pepper and onion in chunks and put in blender with about ½ cup water. Blend until very fine; strain out water.

    Cut up potatoes and eggs combining in large bowl putting aside the yolks.

    In a separate bowl mash yolks and add vegetable mixture. Add salt and pepper to taste. Add about 2 cups Miracle Whip. Mix together. Cover potato and egg mixture with Miracle Whip mixture. Add more Miracle Whip if necessary. Be careful, too much Miracle Whip will make the salad too watery. Refrigerate.

    If you don't have celery and green pepper, substitue with sweet relish.

    * Add some sour cream to the mayo mixture so the salad does not dry out.
