    2 whole chicken breasts, skinned, boned and halved
    2 tbsps. vegetable or peanut oil
    3 tbsps. soy sauce
    2 tbsps. dry sherry
    1 tbsp. sugar
    � tsp. ginger
    � tsp. garlic powder
    1/8 tsp. pepper
    16 oz. pkg. frozen broccoli - carrot fanfare
    1 small onion cut into rings
    1 tbsp. cornstarch
    1 tbsp. water
    cooked rice, hot
    1/3 cup salted peanuts

    Recipe



    Cut chicken into � inch wide strips. Heat oil in skillet and stir fry chicken 1 minute.

    In small bowl, combine soy sauce, sherry, sugar, ginger, garlic powder and pepper. Pour over chicken and cook 2 minutes. Stir in frozen vegetables and onions, cover. Simmer for 6 � 8 minutes or until vegetables are crisp tender, stirring once.

    In small bowl combine cornstarch and water until smooth, gradually add to chicken mixture. Stir constantly until thickened. Serve over hot rice. Top with salted peanuts. 4 Servings
