POTATO PANCAKES

1 cup flour
4 eggs
1 tbsp. minced onion
½ tsp. salt
4 medium potatoes, shredded OR 2 1/2 cups frozen hash browns, defrosted
1 cup whole milk
2 tbsps. sugar
1 tbsp. parsley, freeze-dried
¼ tsp. baking powder
2 tbsp. flour
Recipe
Beat flour, milk, eggs, sugar, onion, parsley, salt, and baking powder until smooth. Stir potatoes and flour into mixture. Fry ¼ cup at a time in skillet for 1 ½ - 2 minutes per side.
Serve with butter, salt and pepper.
