    RICE PILAF WITH PEAS

    8 slices bacon, diced
    1 medium onion, chopped
    2 cups long grain rice
    2 - 10oz. pkgs. frozen peas
    2 cups water
    1 can chicken broth
    salt and pepper

    Recipe



    Cook and crumble bacon, set aside.

    Pour off all but 1/4 cup bacon drippings from skillet. Add chopped onion to skillet and cook til tender. stir rice, frozen peas, water, chicken broth, salt and pepper into mixture. Heat to boiling.

    Reduce heat to low, cover and simmer 20 minutes until rice is tender. Add bacon and serve.
