ROASTED RED POTATOES

List of Ingredients
1 lb. small red potatoes
1 tbsp. olive or veg oil
½ tsp. salt
1/8 tsp. pepper
2 tbsps. grated parmesan cheese
Recipe
Cut the potatoes into ¼ inch thick slices; toss with oil. Place in a singles layer in a greased 13x9x2 baking pan. Sprinkle with salt, pepper and parmesan cheese. Cover tightly with foil.
Bake in a 350 degree oven for 40 minutes or until tender.
