Old Country Quiche

- 1 Tbsp unsalted butter
- 1 Small yellow onion, chopped
- 2 Cup swiss cheese, shredded
- 6 Slices lean bacon, cooked and crumbled
- 2 Tbsp flour
- 1 (9-inch) unbaked pie crust
- 3 Large eggs
- 1 Cup milk
- 1/4 tsp. salt
- 1/8 tsp. ground nutmeg
Instructions
- Heat oven to 400.
- In a skillet, melt the butter over medium-high heat. Add the onion and saute 5 minutes or until soft, then transfer to medium bowl.
- Toss with the cheese, bacon and flour. Spread in the pie crust.
- In the same bowl, wisk the eggs with the milk, salt and nutmeg. Pour over the pie mixture and bake, uncovered, 35 minutes or until the center is set.
- Let stand 10 minutes before cutting into wedges.
