Recipe Introduction
My mom got this recipe from a co-worker years ago. It's still the best caramel corn recipe I've come across.
List of Ingredients
- 6 cups of popped corn
- 1 cup mixed nuts, optional
- 1/3 cup margarine or butter
- 2/3 cup sugar (can use about 1/2 cup brown sugar, packed, instead)
- 1/3 cup corn syrup
- 1/4 tsp. salt
- 1 tsp. vanilla extract
- 1/4 tsp. baking soda
Instructions
- Place popcorn and nuts into a large shallow pan; toss. In saucepan, melt butter over medium heat; stir in sugar, corn syrup and salt. Stirring constantly, bring to boil. Without stirring, boil 5 minutes. Remove from heat, stir in vanilla and baking soda. Pour over popcorn mixture; toss to coat well. Bake in pre-heated 250 oven. 30 - 40 minutes, stirring occasionally. Turn onto wax paper-lined tray. Cool; break apart. Store in tightly covered container.
