    List of Ingredients


    • 1 Pound lean ground beef
    • 1 med. onion, chopped
    • 3 stalks celery, chopped
    • 5 med. carrots, sliced
    • 1 Can (28 0z.) crushed tomatoes with added puree
    • 2 Cup beef broth
    • 2 Cup water
    • 6 Cup fresh spinach, chopped
    • 1/3 Cup white rice
    • 1 tsp. dried basil
    • 1 tsp. dried thyme
    • salt and pepper, to taste


    Instructions


    1. In a 5-qt. soup pot, cook beef and onion over medium heat, stirring occasionally, until beef is browned 5-7 minutes. Drain off any fat.
    2. Stir in celery and carrots and cook 3 minutes.
    3. Mix in crushed tomatoes, broth, water, 3 cups spinach, rice, basil, and thyme. Heat to boiling.
    4. Reduce heat to medium, cover, and simmer 15 minutes.
    5. Stir in remaining 3 cups spinach and salt and pepper.
    6. Cover and cook 5 minutes longer.
