    Short Cut Tortellini Soup

    List of Ingredients


    • 1 Tbsp vegetable oil
    • 1 Med. onion, chopped
    • 2 Cup zucchini, chopped
    • 2 Cup carrots, chopped
    • 1 tsp. garlic, minced
    • 1/3 Cup fresh basil, chopped
    • 2 Med. tomatoes, chopped
    • 1/4 tsp. pepper
    • 1 tsp. parsey
    • 2 Cans (14 1/2 Oz.) chicken broth
    • 1 Pkg. (9 Oz.) fresh cheese tortellini
    • 2 Cup frozen corn kernels
    • grated parmesan


    Instructions


    1. In a 5-qt. soup pot, heat oil until hot over medium heat. Add onion, zucchini, carrots, ang garlic. Cook, stirring often, until onion is transparent, about 5 minutes.
    2. Add basil, tomatoes, pepper, parsley, and broth. Heat to boiling, about 10 minutes.
    3. Stir in tortellini and corn. Reduce heat and simmer until tortellini is tender, 5-6minutes.
    4. Serve topped with parmesan cheese
