Short Cut Tortellini Soup

- 1 Tbsp vegetable oil
- 1 Med. onion, chopped
- 2 Cup zucchini, chopped
- 2 Cup carrots, chopped
- 1 tsp. garlic, minced
- 1/3 Cup fresh basil, chopped
- 2 Med. tomatoes, chopped
- 1/4 tsp. pepper
- 1 tsp. parsey
- 2 Cans (14 1/2 Oz.) chicken broth
- 1 Pkg. (9 Oz.) fresh cheese tortellini
- 2 Cup frozen corn kernels
- grated parmesan
Instructions
- In a 5-qt. soup pot, heat oil until hot over medium heat. Add onion, zucchini, carrots, ang garlic. Cook, stirring often, until onion is transparent, about 5 minutes.
- Add basil, tomatoes, pepper, parsley, and broth. Heat to boiling, about 10 minutes.
- Stir in tortellini and corn. Reduce heat and simmer until tortellini is tender, 5-6minutes.
- Serve topped with parmesan cheese
