Funnel Cakes
This is what they serve at Crab, Crawfish, Shrimp Festivals down here in Georgia & Florida. There are probably other places that serve this as well, but down here this is a popular dessert or snack.
List of Ingredients
2 2/3 cups flour
2 1/2 teaspoons salt
1 teaspoon baking soda
4 tablespoons sugar
1 1/2 tablespoons baking powder
2 eggs, beaten
1 1/3 cups milk (more if batter is too thick)

Sift together flour, salt, baking soda, sugar, & baking powder; set aside. Mix eggs & milk together & add to dry ingredients. Beat till smooth. Hold finger over bottom of a funnel. Pour in some batter. Remove finger & let batter drop into a spiral motion into pan filled with 1" of 350° hot oil (I use melted shortening). Fry till golden brown, turn once. Remove from pan & drain on a paper towel. While still warm, sprinkle with lots of powdered sugar & serve immediately.
This recipe has been doubled, it may be cut in half if so desired.
