Recipe Introduction
A delicious twist on "ordinary" lasagna. It makes a fabulous lunch. Four 8 ounce servings.
List of Ingredients
8 lasagna noodles, cooked and drained
1 tablespoon vegetable oil
1 cup low fat cottage cheese
2 ounces shredded mozzarella cheese
16 fresh spinach leaves, chopped
1/2 teaspoon garlic powder
12 fresh basil leaves, chopped
1/4 teaspoon black pepper
1 cup chopped tomatoes
1/2 cup low calorie Italian dressingRecipe
Brush cooked noodles with oil. Combine cheeses, spinach and garlic. Spread cheese mixture over noodles. Add basil leaves and pepper to season. Reserve some basil. Roll up noodles. Place on serving platter. Sprinkle with chopped tomatoes and low-calorie dressing. Top with reserved fresh basil. Serve with warm crusty bread.
