    This recipe is great to use in the summer when your garden is overflowing with zucchini. It is a tangy salad with undertones of the mint that make it really refreshing.

    List of Ingredients




    Salad
    4 cups torn fresh spinach
    1 medium zucchini, sliced
    ½ medium red onion, thinly sliced and separated into rings
    2 tablespoons chopped fresh mint
    ½ cup crumbled feta cheese

    Dressing
    1/3 cup olive oil
    3 tablespoons red wine vinegar
    1 teaspoon Dijon mustard
    ½ teaspoon sugar

    Recipe



    In a large bowl, combine spinach, zucchini, onion, mint, and feta cheese. In jar with tight fitting lid, combine all dressing ingredients; shake well. Refrigerate. Just before serving, toss salad and dressing. 6 (1 cup) servings.
