This is so much better than the divinty recipe on the confectioner's sugar box.
Cyndi's notes: Before you begin to make divinity, make sure it's a clear "clean" day, not humid. Some people say that doesn't make a difference, but I'm hear to tell you it does, anytime you work with egg whites you need to make sure it's a humid-free clear day.
Making divinity is an art, it's not something that everyone can make and most of the time it doesn't turn out the first time someone tries it. My advice would be to practice. You will get better after a couple of years because you will learn from prior "mistakes". When you start making this, make sure that you are going to have time. This recipe said that it should take 20 min to cook, but PLEASE don't rush this until you are very comfortable with it. And make sure that you follow the directions carefully.

3 egg whites
1 teaspoon vanilla extract

4 cups sugar
1 cup white corn syrup
3/4 cup COLD water

1. In heavy saucepan over medium heat, stir together sugar, corn syrup and cold water just until sugar is dissolved; DO NOT STIR AFTER THIS POINT! Cook mixture until it registers 260F degrees on candy thermometer (hard ball stage).
2. Meanwhile, in large clean bowl of standing mixer, beat egg whites until still peaks form. On high speed, carefully pour steady stream of hot syrup mixture into beaten whites. Add vanilla; continue to beat until mixture holds its shape, about 7 to 10 minutes. Stir (with a very sturdy spoon) in chopped pecans.
3. Using 2 teaspoons, drop divinity onto waxed paper, using 1 spoon to push candy off the other. You may wish to transfer divinity to a piping bag with no tip; and pipe mounds onto waxed paper. If mixture does become too stiff, add a few drops hot water. Store divinity at room temperature for up to 1 week.
Makes about 50 pieces.
