List of Ingredients
1/4 cup butter, softened
1 cup packed brown sugar
1 1/2 cup flaked coconut
1 cup flour
1/2 tsp salt
filling:
1-8oz can crushed pineapple
3/4 cup sugar
3 tbsp cornstarch
1/4 tsp salt
1 tbsp butter
1 tbsp lemon juice
Recipe
Cream butter and brown sugar until fluffy. Add coconut, flour and salt; mix with fork until crumbly. Press half of crumb mixture into a greased 9" square baking pan and set aside.
In a medium saucepan, combine pineapple, sugar, cornstarch and salt and stir occasionally. Bring to a boil and cook, stirring constantly for 5 minutes. Remove from heat. Stir in butter and lemon juice and allow to cool slightly. Spread pineapple filling over crumb mixture. Cover with remaining crumbs and gently press down. Bake at 350 degrees for 30 minutes.
