Recipe Introduction
This recipe is straight from my kitchen. This makes a LOT, so you will need 2 Dutch ovens. I have a 8-qt and a 9 qt. I just split the ingrediants up between the two. I then put the chili in crockpots to keep it warm while serving.
List of Ingredients
4 lbs ground chuck or lean ground beef
1 (46oz) tomato juice
1 (46oz) regular V-8
1 (15oz) white kidney beans
2 (15oz) can pinto beans
1 Large can dark red kidney beans (not sure of the size)
2 (29oz) Del-Monte diced tomatoes
2 (14.5oz) Del-Monte Zesty Chili Style diced tomatoes
1 (29oz) Hunt's tomato sauce
"The Brown Bag" chili powder mix
1 TBSP cumin
3 cups chopped onion
1 large bell pepper, chopped
Frank's hot sauce, to taste
salt and pepper, to taste
Recipe
Cook meat, onion and bell pepper until meat is no longer pink and veggies are crisp-tender; drain.
Add remaining ingrediants. Bring to a boil, then reduce to a simmer. Simmer for 1 1/2 hrs. If using a crockpot cook on low for 6-8 hrs.
This is spicy, so if you don't like it that spicy, reduce the amount of onions and cumin.
