    1 can (28 oz) crushed tomatoes
    1/2 cup chopped onion
    1/2 tsp minced garlic
    1 can (31oz) refried beans
    1 can (14 1/2 oz) chicken broth
    1 tablespoon minced fresh cilantro
    5 corn tortillos (6 "), cut into 1/2" strips

    Recipe



    In a large saucepan, bring tomatoes, onion and garlic to a boil. Reduce heat; simmer uncovered for 5 min. Stir in the refried beans, broth and cilantro; simmer for 15 min.

    Meanwhile, place tortillo strips on a baking sheet and bake for 12-15 min at 350 degrees (or until crispy). Garnish soup with tortillo strips, sour cream and cheese if desired.

    Yield: 8 servings (2 quarts)
