    • OIL
    • 1/2 CUP DICED SHALLOTS
    • 1/2 CUP DICED PROSCIUTTO
    • 1 CUP DICED PORTABELLO MUSHROOMS
    • 1/2 CUP MARSALA
    • 1/2 CUP DEMI-GLACE
    • 1 TBP WHOLE BUTTER
    • FRESH PARSLEY
    • 2OZ DICED FRESH MOZZERALLA


    Instructions


    1. SAUTE SHALLOTS AND MUSHROOMS IN HOT OIL. ADD SAUTE FOR 2 MINUTES AND FLOMBE WITH MARSALA.
    2. STIR IN DEMI AND BUTTER. REDUCE BY 1/4. REMOVE FROM HEAT.
    3. GRILL FILET TO DESIRED TEMP. PLACE FILET ON PLATE . TOP WITH SAUCE
    4. GARNISH WITH FRESH MOZZERALA AND PARSLEY
