- 1 POUNDED CHICKEN BREAST
- 2 THIN SLICES PROSCIUTTO
- FLOUR
- OIL
- 1 TBP DICED SCALLIONS
- 1 CUP SLICED MUSHROOMS( SHITTAKES WORK WELL)
- 1/2 CUP DRY MARSALA
- 1/2 CUP CHICKEN STOCK
- 1/4 CUP HEAVY CREAM
- CRACKED BLACK PEPPER
- PARSLEY
Instructions
- CUT CHICKEN BREAST IN HALF. POUND 1 SLICE PROSCIUTTO INTO EACH HALF
- DREDGE EACH CHICKEN BREAST IN FLOUR.
- PAN FRY CHICKEN IN HOT OIL. UNTIL EACH SIDE IS GOLDEN BROWN. REMOVE
- ADD SHALLOTS AND MUSHROOMS. SAUTE UNTIL TENDER FLOMBE WITH MARSALA. IF PAN FLAMES UP VERY GOOD!!!
- AFTER A MINUTE ADD CHICKEN STOCK AND CREAM. REDUCE BY HALF. REMOVE FROM HEAT. SEASON
- PLACE CHICKEN BREAST ON A PLATE. TOP WITH SAUCE. GARNISH WITH FRESH TYME AND PARSLEY

SERVE WITH MASHED POTATOES, PASTA OR RICE PILAF
