    • 1 POUNDED CHICKEN BREAST
    • 2 THIN SLICES PROSCIUTTO
    • FLOUR
    • OIL
    • 1 TBP DICED SCALLIONS
    • 1 CUP SLICED MUSHROOMS( SHITTAKES WORK WELL)
    • 1/2 CUP DRY MARSALA
    • 1/2 CUP CHICKEN STOCK
    • 1/4 CUP HEAVY CREAM
    • CRACKED BLACK PEPPER
    • PARSLEY


    Instructions


    1. CUT CHICKEN BREAST IN HALF. POUND 1 SLICE PROSCIUTTO INTO EACH HALF
    2. DREDGE EACH CHICKEN BREAST IN FLOUR.
    3. PAN FRY CHICKEN IN HOT OIL. UNTIL EACH SIDE IS GOLDEN BROWN. REMOVE
    4. ADD SHALLOTS AND MUSHROOMS. SAUTE UNTIL TENDER FLOMBE WITH MARSALA. IF PAN FLAMES UP VERY GOOD!!!
    5. AFTER A MINUTE ADD CHICKEN STOCK AND CREAM. REDUCE BY HALF. REMOVE FROM HEAT. SEASON
    6. PLACE CHICKEN BREAST ON A PLATE. TOP WITH SAUCE. GARNISH WITH FRESH TYME AND PARSLEY

    SERVE WITH MASHED POTATOES, PASTA OR RICE PILAF
