    • 1 TBP OIL
    • 1 LB CHICKEN BREAST
    • 1/2 CUP DICED WHITE ONION
    • 1 TSP FRESH GARLIC
    • 1/2 GAL CHICKEN STOCK
    • 1 CUP FIRE TACO SAUCE
    • 1 LB CHEDDAR CHEESE
    • 1 TSP SALT
    • 1 TSP CHILI POWDER
    • 1/2 TSP CUMIN
    • SHREDDED CHEDDAR CHEESE
    • TORTILLA STRIPS
    • PICO DE GALLO


    Instructions


    1. OVER MEDIUM HEAT ADD OIL TO LARGE SAUCE PAN. ADD CHICKEN AND BROWN FOR 4-5 MINUTES.
    2. ADD ONIONS AND GARLIC AND SAUTE FOR 2 MINUTES. ADD CHICKEN STOCK
    3. ADD TACO SAUCE, CHEESE AND SPICES TO POT AND BRING TO A BOIL.
    4. REDUCE HEAT AND SIMMER FOR 30 MINUTES UNTIL THICK.
    5. SERVE SOUP TOPPED WITH CHEESE AND PICO DE GALLO. SERVE TORTILLA ON THE SIDE TO DIP
