    • 8 SLICED WHITE ONIONS
    • 1 DICED CELERY STACK
    • DICED SCALLIONS
    • 2 TBP FRESH GARLIC
    • 1 TBP THYME
    • 1 CUP MADERIA OR SHERRY
    • 1 GAL BEEF STOCK
    • 1/2 GAL CHICKEN STOCK
    • SALT
    • PEPPER
    • SEASONED CROUTONS
    • SLICED SWISS


    Instructions


    1. SAUTE ONIONS IN BUTTER UNTIL TENDER. ADD GARLIC. COOK FOR 2 MORE MIN.
    2. ADD REST OF INGREDIENTS AND SIMMER UNTIL YOU GET A ROLLING BOIL. REMOVE FROM HEAT AND SEASON


    Final Comments


    ADD CROUTONS AND BAKE SWISS ON TOP. THEN YOU HAVE A RESTAURANT QUALITY FRENCH ONION SOUP!!!
