CHICKEN SALTIMBACCO WITH MARSALA SAUCE

- 1 8-10 OZ CHICKEN BREAST
- 2 THIN SLICES PROSCIUTTO
- FLOUR
- OIL
- 1 TBP DICED SHALLOTS
- 1 CUP SLICED MUSHROOMS(SHITTAKES WORK VERY WELL)
- 1/2 CUP DRY MARSALA
- 1/2 CUP CHICKEN STOCK
- 1/4 HEAVY CREAM
- CRACKED BLACK PEPPER
- PARSLEY
Instructions
- CUT CHICKEN BREAST IN HALF. POUND 1 SLICE PROSCIUTTO INTO EACH HALF.
- HEAT OIL IN A SAUTE PAN UNTIL HOT.(MUST BE HOT TO WORK)DREDGE EACH CHICKEN BREAST IN FLOUR.
- PAN FRIED CHICKEN IN OIL UNTIL EACH SIDE IS GOLDEN BROWN. REMOVE.
- ADD SHALLOTS AND MUSHROOMS. SAUTE UNTIL TENDER. FLOMBE WITH MARSALA. IF THE PAN FLAMES UP THAT IS GOOD.
- AFTER 1 MINUTE ADD CHICKEN STOCK AND CREAM. REDUCE BY HALF.TURN OFF HEAT. ADD PEPPER AND PARSLEY.
- PLACE CHICKEN BREAST ON A PLATE, POUR SAUCE OVER TOP. GARNISH WITH FRESH THYME.
- SERVE WITH MASHED,PASTA OR RICE PILAF.
