CHEESE AND BEER SOUP

- 1 CUP BUTTER
- 2 CUP DICED BACON
- 1 DICED GREEN PEPPER
- 1 CUP DICED CELERY
- 1 DICED WHITE ONION
- 2 DICED ROASTED RED PEPPER
- 1 TBP FRESH GARLIC
- 1 CUP FLOUR
- 2 CUP CHICKEN STOCK
- 1 CUP LIGHT BEER
- 2 CUP HEAVY CREAM
- 3 LB CHEDDAR
- 1 LB PROVOLONE
- 1/2 PARSLEY
- SALT
- PEPPER
Instructions
- SAUTE BACON,PEPPER,CELERY,ONION AND GARLIC IN BUTTER UNTIL TENDER.
- ADD FLOUR. STIR IN WELL. ADD STOCK, BEER AND CREAM. BRING TO A BOIL.
- ADD CHEESES. STIR OFTEN UNTIL CHEESES ARE COMPLETELY MELTED. SEASON. TOP WITH FRESH PARSLEY.
