ITALIAN SAUSAGE AND TORTELLINI SOUP

- 1/2 CUP OIL
- 1 1/2 LB OF ITALIAN SAUSAGE
- 1 DICED WHITE ONION
- 1 TBP OF FRESH GARLIC
- 2 CUP OF DICED TOMATOES
- 1 JULIENNE ZUCCHINI(GREEN OR SUMMER)
- 2 DICED CARROTS
- 1 DICED GREEN PEPPER
- 1 TSP DRIED BASIL
- 1 TSP OREGANO
- 1 CUP RED WINE
- 2 GALLONS OF BEEF STOCK
- TORTELLINI
- PARMESAN
Instructions
- SAUTE SAUSAGE,ONION,CARROTS AND PEPPER IN OIL FOR 5 MINUTES
- ADD FRESH GARLIC AND SEASONINGS. STIR FOR 1 MINUTE.
- ADD RED WINE. LET REDUCE FOR 2 MINUTES. ADD REST OF INGREDIENTS AND SIMMER UNTIL THE SOUP GETS KIND OF SAUCY
- SERVE WITH CHEESE TORTELLINI AND PARMESAN
