    Chorizo Chile Relleno Bake

    List of Ingredients




    2 lb of chorizo or substitute spicy pork sausage
    1/2 lb ground beef
    2 cloves garlic, minced
    1 small onion, chopped
    2 4oz cans WHOLE green chiles
    4 eggs
    2 cups shredded cheddar cheese
    1/4 cup flour
    1 1/2 cups milk
    1/2 tsp salt
    1/4 tsp chili powder
    Tobasco sauce to taste

    Preheat oven to 350. Grease a 9x9 baking dish. Brown chorizo and ground beef til cooked through and drain well. Saute onion and garlic until transparent.Add to meat mixture. Line baking dish with once can of drained and seeded chiles, top with 1 1/2 cups cheese. Spread the meat and onion mixture over cheese, top with remaining chiles. Beat eggs and flour til smooth.Add milk, salt, chile powder and tobasco to taste. Blend well and pour over casserole. Bake for 60 minutes uncovered, then sprinkle with remaining cheese and bake til cheese is bubbly and melted.
    Let stand 5 minutes before serving.
