    Spinach Stuffed Steak

    1 package of frozen chopped spinach, thawed and drained
    1 Jar of roasted red peppers, drained
    1 egg white
    ½ cup of seasoned breadcrumbs
    ¼ cup of grated Parmesan cheese
    ¼ cup of sunflower kernels, toasted
    1 clove of garlic, minced
    ½ teaspoon of salt
    1 Flank steak (about 1-1/2 lbs.)

    In a bowl, combine the first (8) eight ingredients and mix well. Cut the steak horizontally from a long edge to within ½ inch of the opposite edge, open (like a book) and flatten to ½ inch of thickness.

    Spread spinach mixture over the steak to within 1 inch of the edges. Roll-up jellyroll style, starting with the long side, and tie back with a kitchen string. Place in a greased 13x9x2 inch-baking dish.

    Cover and bake for 1 hour. Uncover and bake for 30-45 minutes, or until tender. Let stand for 10-15 minutes. Cut into ½ inch slices to serve.
