    Sweet Bread

    A special treat for those of us who don't have bread-makers! ha ha ha

    1 pkg yeast
    1 1/2 cup sugar
    2 cups lukewarm water
    6 cups flour
    1/2 cup shortening
    2 eggs, well-beaten
    1/2 tsp salt
    1 tsp anise seed

    Dissolve yeast and 2 Tbs of sugar in warm water. Stir in 3 cups of flour and beat until mixture is smooth. Allow to stand in a warm place (85 degrees F) for about 2 hours. Add shortening and remaining sugar (which have been creamed together), the eggs, salt, anise seed, and the rest of the flour.

    Knead on a floured surface until smooth and elastic. Place in a greased bowl (in a warm area) and allow to double in size - about 2 hours.

    Knead again and let stand for another half hour.

    Knead again and shape into 2 loaves. Place each in a greased loaf pan and brush tops with melted butter.

    Let rise again until double in size, then bake at 425 degrees F for 10 minutes. Lower heat to 325 and bake about 50 more minutes.
