Cajun Chicken Pasta
2 boneless, skinless chicken breasts
2 tsp Cajun seasoning
2 Tbs butter
4 slices green pepper
4 slices red sweet pepper
4 mushrooms, sliced
1 green onion, sliced crossways
1 1/2 cups heavy cream
1/4 tsp basil (dried)
1/4 tsp lemon-pepper seasoning
1/4 tsp salt
1/8 tsp garlic powder (I use more)
1/8 tsp black pepper
4 oz linguine, cooked and drained
Cut chicken into thin strips and season with Cajun seasoning. Saute in butter in a large skillet over medium heat until almost tender (about 7 minutes).
Add vegetables and mushrooms - cook and stir for about 3 minutes. Reduce heat and add cream and seasonings. Heat through. Add pasta and toss; heat through again.
Serve hot and sprinkle with Parmesan cheese if desired.
