Los Alamos Chicken
Easy and good!
Serves 4.
1 cup cooked chicken breast, large chunks
6 cups assorted greens, washed/dried
2 carrots, diced
1/4 cup canned corn, rinsed
1/2 cup canned kidney beans, rinsed
1/4 cup Vidalia onions, diced
1/4 cup sweet red peppers, diced
1/4 c scallions, diced
Mix dressing ingredients:
2 tsp celery seed
1/4 cup reduced calorie ranch dressing
1 tsp tabasco sauce
1 Tbs Vinegar
Toss salad ingredients and top with dressing. Garnish with scallions.(Dressing best when prepared and stored overnight in refrigerator.)
Keep any leftover dressing in refrigerator.
