Quick and Easy Chicken Parmesan
Note: I like to saute chunks of green pepper and onion and add to spaghetti sauce before placing in baking dish.
4 boneless chicken breast halves
1 egg
1/2 cup Italian bread crumbs
1/4 cup Parmesan cheese
1/2 tsp garlic powder
2 Tbs olive oil
2 cups spaghetti sauce
4 slices Mozzarella cheese
Pound chicken so it is very thin. Beat egg and combine with bread crumbs, Parmesan cheese, and garlic powder.
Dip chicken in egg and then dredge through egg; coat with crumb mixture.
Heat oil in a skillet on medium heat. Cook chicken, turning once, for about 15 minutes and set aside.
Grease baking dish and pour in half of spaghetti sauce. Place chicken on top and cover with remaining sauce. Top with Mozzarella slices and bake at 375 degrees F until cheese is bubbly.
Serve over cooked pasta.
