    Turkey-Broccoli Casserole

    Great over rice!

    2 pkgs frozen broccoli (or large head fresh)
    1 boneless turkey breast, cut into 1-inch cubes
    2 cans cream of vegetable soup, condensed
    1 tsp mayonnaise
    2 tsp lemon juice
    6 Tbs white wine
    3/4 cup Sharp cheddar cheese, shredded
    1/2 cup crackers, crushed
    1 Tbs butter, melted

    Grease pan with oil spray. Cook broccoli only halfway and spead in the bottom of a 9 x 13-inch pan. Put turkey over broccoli.

    Mix soup and mayonnaise, lemon juice, and wine together over low heat. Pour over turkey.

    Spkinkle cheese then cracker crumbs on top, and finally top with melted butter.

    Bake at 350 degrees F for an hour and let stand 10 minutes before serving.
