Wine-Herbed Orange Roughy
3/4 - 1 lb orange roughy (2 large fillets), or any light fish such as whitefish or haddock
1 Tbs butter
1 tsp minced green onion
1 tsp minced fresh parsley
1/4 tsp crushed oregano leaves
1/8 tsp thyme
1/8 tsp tarragon
1/8 tsp marjoram
1/8 tsp finely minced garlic
3/4 c dry white wine
fresh grated Parmesan cheese
paprika
Mix ingredients together (except for Parmesan and
paprika). Simmer, stirring, for just a few minutes; pour over fish.
Generously sprinkle Parmesan over fish and top with paprika. Bake at 350 degrees for 20 to 25 minutes or until fish flakes easily with a fork.
