    Chocolate-Mocha Buttercream Frosting

    1 cup Sugar
    1/3 cup Water
    1/4 tsp Cream of tartar
    4 Egg yolks
    1 1/2 cup Unsalted butter; softened
    6 oz Semi-sweet morsels
    4 Tbs Strong coffee (diluted)
    1/2 tsp Vanilla extract

    Mix sugar, water and cream of tartar in a saucepan and bring to a boil. Boil over medium heat until mixture reaches 234 degrees F.

    In a large bowl with a mixer, beat the egg yolks until thick. Add the butter in small pieces; beat well. Combine chocolate and the coffee in a saucepan and heat gently until chocolate is melted and mixed, add vanilla, add to sugar mixture; beat well.
