    Coconut Layer Cake

    2 1/2 cups pastry flour
    1 1/2 cup sugar
    3 tsp baking powder
    3 tsp salt
    1/2 cup Crisco
    1 cup milk
    1 1/2 tsp vanilla extract
    2 large eggs
    white frosting
    1 cup flaked coconut

    Preheat oven to 350 degrees and grease two 9-inch baking pans.

    Combine all ingredients except frosting and coconut into large bowl and mix for 3-4 minutes on medium speed.

    Pour into baking pans and bake 30 to 35 minutes or until toothpick inserted in middle comes out clean.

    Cool and frostwith your favorit white icing, spreading moistened coconut between and on top and sides of cake.
