    Eight-Minute Fudge

    4 1/2 cups sugar
    1 large can evaporated milk
    8 oz miniature marshmallows
    18 oz chocolate chips (I like to use milk chocolate)
    1/2 cup butter
    2 cups walnuts, chopped
    1 tsp vanilla

    In a heavy , large saucepan, combine the sugar and evaporated milk. Bring slowly to a rolling boil and allow to boil for 8 minutes.

    Remove from heat and add marshmallows, chocolate chips, and butter. Stir until melted; add nuts and vanilla.

    Spread on 2 large wax paper-lined pans and cool (cooling in the refrigerator makes a creamier fudge). Cut into 1-inch squares.

    Makes a double batch and freezes well.
